Fresh is best, as every decent chef knows. This is why we choose our suppliers and producers with care. The principal is simple, start from home and then slowly move outwards therefore we source our vegetables and herbs primarily form local farms. We could not possibly source everything we need in volume for this size of restaurant in the immediate vicinity but we do try.
